Apricot Bites:
4oz cream cheese, softened
12 fresh apricots, halved
1/2 cup pistachios, chopped
1) Stir cream cheese until smooth.
2) Spoon into apricots.
3) Sprinkle with nuts.
4) Serve as an appetiser, snack or dessert. |
Apricot Jam:
40 apricots, peeled and chopped
4 cups sugar
5 tablespoons lemon juice
2 cups water
1) Mildly boil all ingredients for 30 minutes.
2) Skim and discard the foam at the end of cooking.
3) Fill jars and seal within 1 hour. |
Apricot Mango Chutney:
4 medium apricots, diced
3 medium mangos, peeled & diced
8oz sugar
1 pint white wine vinegar
1 teaspoon cardamon
1 teaspoon dried ginger
1 tablespoon coriander seed
1 teaspoon salt
1 teaspoon white pepper
1 red pepper, finely diced
8oz raisins or 12oz diced grapes
1/2 red onion, finely diced
1) Combine all the ingredients in a saucepan and simmer, uncovered, for 45 minutes.
2) Place in clean jars and refrigerate up to 3 hours.
