Avocado & Roasted Garlic Dip Avocado Ice Cream
Avocado & Roasted Garlic Dip:
Serves 4
1 avocado (about 8 ounzes)
1 tablespoon lemon juice
10 cloves roasted garlic, squeezed from skin*
1 clove garlic, finely chopped
1 tablespoon chopped parsley
1/8 teaspoon dried or fresh oregano
1/8 teaspoon salt
1/8 teaspoon ground black pepper

1) (*To roast garlic, place cloves in a square of tin foil, drizzle with 1 teaspoon of olive oil. Seal foil and bake at 450F until garlic is very soft but not browned - about 20 minutes).
2) Roughly mash avocado. Consistency should not be too smooth.
3) Fold in remaining ingredients.
4) Chill for 1 hour.
5) Serve with fresh or fried vegetables, chicken wings or as a topping for grilled meat, poultry, fish or egg dishes.
Avocado Ice Cream:
Serves 4
1/2 cup orange juice
1/2 cup lemon juice
14oz evaporated milk, well chilled
2 avocadoes, mashed
1 & 1/2 cups sugar

1) Mix juices.
2) Beat milk in a bowl until almost doubled in volume.
3) Add all ingredients, blend well and freeze.
