Hawaiian Salad:
 Serves 4
12 pineapple rings
1 cup pineapple or orange juice
Fresh herbs
2 garlic cloves, finely chopped
Salt
Pepper
4 boneless chicken breasts
1) Place chicken breasts in a plastic container.
2) Mix fruit juice, herbs, garlic, salt and pepper. Pour over the chicken. Marinade in fridge for 2-4 hours.
3) Grill chicken on one side then turn.
4) Add pineapple slices to grill and cook until chicken is done and pineapple hot.
5) Serve on a bed of crisp mixed salad. |
Pineapple Prawn Kebabs:
 Pineapple, cubed
Prawns
Teriyaki sauce
1 cup pineapple or orange juice
1) Marinate prawns in 2 parts teriyaki to one part fruit juice.
2) Thread marinated prawns and pineapple cubes on skewers, baste with remaining marinade and grill.
3) Serve with rice and salad or sauted vegetables.
