If living in a finca or villa in this part of Spain, you are more than likely to have an abundance of exotic fruit bearing trees on your land. They are even regularly found in courtyards and gardens of townhouses. You may not have chosen to plant these trees, but here they are so why waste the yield? Jams, pickles, chutneys and preserves are an ideal way to conserve the produce that you are unlikely to be able to eat all at once at harvest. Several of our friends make a little money from selling mango chutney at markets and to Indian restaurants, whilst one enterprising chappie (hello Derek) sells his marmalade to English bars for inclusion with their breakfast specials.
