Every November, Totalan hosts the annual Chanfaina Fiesta. Chanfaina is a popular and ancient dish, fuel to local farmers, that begins with potatoes fried in olive oil. The next step is the addition of sausages, tripe and black pudding whilst stirring gently on a low heat. These cooked ingredients are then placed on a base of breadcrumbs, salt, vinegar, garlic, oregano, cloves, cumin and pepper. The name Chanfaina is undoubtably of Arab origin although one of its ingredients, the potato, did not come to Europe until the discovery of America when the Moors were being expelled from Spain. During the fiesta, music, dancing and other entertainment accompanies the dish with wine and beer given away to locals and visitors alike. Details of Totalan´s other annual festivals can be found at the fiestas link at the bottom of this page.
